Salmon with Cork Crust

Don Bailey of Portland crafted this salmon that is representative of fine Northwest cuisine. Instead of a “mustard herb crust,” this salmon has a “cork crust.” The design represents the marriage of two natural resources of the northwest – land and sea – and of two culinary traditions – salmon and wine.
